Ageing: The wine is then aged in small stainless steel tanks where it starts and completes the malolactic fermentation. In June of the following year, the wine is bottled and begins to be sold.
Vinification: The grapes pass to the press-destemming and, even before the start of fermentation, has a short process of pre-fermentative cold maceration (at + 10 ° C). This is followed by tumultuous fermentation, which is regularly carried out with the cap of floating pomace, which is daily soaked in the must. After only 5-6 days of maceration, the wine is pressed, followed by a first flaking.
